Ingredients (Makes 2 portions)

1-2 Slices Wholegrain/Rye Bread
1 Tin Cooked Beans (black beans, haricot beans or any other small bean work well)
1 Tin Chopped Tomatoes (or a jar of tomato passata works fine)
1 tsp Dried Oregano or Mixed Herbs
Sprinkle of Black Pepper

Recipe

1) Put the tomatoes in a high speed blender (or you can use a hand blender) with a sprinkle of black pepper and a teaspoon of dried oregano/mixed herbs and blend until smooth or just use a jar of passata.

2) In a glass jug combine the cooked beans (drain first if from a tin) and tomato mixture. Heat in the microwave (or you can cook in a pan on the hob if preferred).

3) Toast your favourite wholegrain or rye bread.

4) Add the hot beans onto the toast and sprinkle with a bit more oregano and pepper or some fresh greens if you have them.

You can't get much of a better breakfast that's filling and packed with energy to get you through your busy morning!

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
