Ingredients

Firm Tofu

Whole-Grain Wraps

Grated Carrot

Avocado

Cucumber

Salad Leaves

Houmous (See Our Homemade Houmous Recipe)

Dressing (See Our Dressing Recipes)

Recipe

1) Take one of the wraps and spread some houmous around the whole wrap, right to the edges.

2) On top of the houmous, place grated carrot, cubes of firm tofu, thinly sliced cucumber batons, avocado chunks and salad leaves e.g. spinach, rocket, romaine lettuce etc.

3) Then drizzle your choice of dressing over the top before rolling up your wrap and enjoying as a simple lunch or dinner.

Top Tips

It is always the dressings that really make a dish like wraps, pittas and sandwiches. Why not try something new on your wrap and experiment with our Thai Peanut Sauce, Ranch Dressing, Tahini Lemon Dressing or Healthy Pesto?

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
