Frozen Strawberry Bites

This easy dessert recipe is for one portion, but feel free to increase quantities as necessary to keep plenty to hand. These will keep frozen for months, so you can batch make, saving time and effort later.

Feel free to use frozen veg/fruit/herbs etc in any of our recipes if you don’t have fresh options.

Ingredients

10g Oats
10g Cooked Quinoa
50ml Unsweetened Milk (any kind is fine including oat, soya, almond milk etc)
20g Strawberries (or raspberries if you prefer)
1 tbsp Stewed Apple/Apple Sauce (see our apple sauce recipe)

Recipe

1) Place oats, quinoa, half of the milk and 1/2 tbsp apple sauce in a container and mix together.

2) In another microwaveable container, add the raspberries, the rest of the milk and apple sauce. Mix and then cook in the microwave for 1 -2 mins until the raspberries have broken down and upon stirring, will become more of a compote texture.

3) Place oat mixture in the bottom of a small container (or if making more than one, in the bottom of each space on a muffin/cake tray). Push oat mixture down with the back of a spoon until it is packed in tightly.

4) Add the compote mixture on top of the oats. Place the container or muffin/cake tray in the freezer for at least 1 hour to freeze. Remove from the freezer whenever you need a sweet tasty pudding or snack. Eat frozen or just slightly defrosted.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
