Thai Peanut Sauce
This easy Thai peanut sauce recipe is for 1-2 portions, but feel free to increase quantities as necessary to keep plenty to hand in your fridge.
You can also freeze it in ice cube trays for future use to save time and effort later.
Feel free to use frozen veg/fruit/herbs etc in any of my recipes if you don’t have fresh options.
Ingredients
1 tbsp Peanut Butter (100% nuts, smooth or crunchy)
50ml Water
1 tsp Garlic
1/2 tsp Pureed Ginger or 1/4 tsp Ground Ginger
1/2 tsp Pureed Lemongrass
1/4 tsp Pureed Chilli or 1/8 tsp Chilli Powder (Optional)
Recipe
1) Place all ingredients into a jug/mason jar. Only add chilli if you like it spicy!
2) Whisk all ingredients in the jug until fully combined or add lid to mason jar and give it a really good shake.
Enjoy your dressing drizzled over the top of your salad/side dishes or other healthy meals.
Top Tips
If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).
You can also use frozen fruit or veg when you don’t have the fresh option.
Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
