Rainbow Veggie Kebabs

Ingredients

Carrots

Tomatoes

Courgettes

Bell Peppers

Mushrooms

Red Onion

Aubergine

Lemon Juice

Mixed Herbs

Liquid Aminos (or light soy sauce)

Pureed Garlic

Water

Recipe

1) Chop all veg into chunky pieces that can be threaded onto a skewer. Place all chunks of veg into a large bowl.

2) In a separate jug, mix together a squeeze of lemon juice, a sprinkle of mixed herbs, a tablespoon of liquid aminos, a teaspoon of pureed garlic and 50ml water.

3) Pour the dressing over the bowl of veg. Mix the veg around in the bowl, making sure each piece of veg is coated well.

4) Skewer your veg pieces in any order you like and place each completed skewer on the BBQ or under the grill, turning often to cook evenly all the way round.

5) Once cooked to your liking, you could top your veg with one of our dressings, sauces or condiments.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
