Ingredients

400g White Potato

400g Chopped Tomatoes

1/2 Head of Cauliflower

1/2 Butternut Squash

200g Peas

1 Courgette

1 Red Bell Pepper

1 Small White Onion

Large Handful of Spinach Leaves

2 tbsp Curry Powder

1 tbsp Pureed Garlic

2 tsp Ground Turmeric

Recipe

1) Chop the potatoes, squash and cauliflower into small chunks. Boil the potatoes and carrots in hot water for 10 mins, then add the cauliflower and cook for a further 5 mins.

2) Meanwhile, place onions, garlic, curry powder, turmeric and 200ml water in a pan on the hob. Cook on a medium heat and stir until the onions, spices and water create an aromatic paste.

3) Drain the potatoes, carrots and cauliflower and add to the paste. Add all other ingredients and stir until all is well combined. Leave to cook on a low heat with the lid on the pan for at least 20 mins or until the veg is all fully cooked through.

4) Enjoy your curry with some whole-grains such as brown rice, wild rice, quinoa, buckwheat, bulgur or a fresh salad.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
