Chickpeas with watermelon radish & chunky greens

Ingredients

Chickpeas
Avocado
Carrot
Cucumber
Spinach
Watermelon Radish
Cress
Sesame Seeds

Recipe

1) Add cooked chickpeas to a base of spinach, avocado slices, carrot ribbons (use a potato peeler to make the ribbons), chopped, cucumber, sliced watermelon radish or regular radish, cress or other microgreens.

2) Sprinkle with sesame seeds and your choice of healthy dressing or condiment (click here to see options).

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
