Potato Bruschettas

Ingredients

Potatoes (sweet and/or white potatoes)
Tomatoes
Cucumber
Bell Pepper
Purple/Red Cabbage
Spring Onion
Fresh or Dried Basil
Lime Juice

Recipe

1) Pre-heat the oven to 180C. Slice the potatoes lengthways into 1cm slices. Place them on a non-stick baking tray and cook in the oven for 35-45 mins (turning half way through) until soft. You can also cook these in an air fryer (no oil needed).

2) Once cooked, allow to cool and then start layer up your toppings - chopped tomatoes, cucumber, bell pepper, grated purple/red cabbage, spring onion etc. You can add any other veg/salad bits that you like - other great choices include avocado, microgreens, cooked aubergine and courgette.

3) Sprinkle on some dried basil (Thai basil is a lovely flavour to add) or some fresh basil leaves.

4) Enjoy your bruschetta as a side dish, appetiser/starter or main meal if you have made enough to fill your plate (and your tummy!).

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
