Ingredients

100g Cooked Quinoa

100g Seed Mix E.g Sunflower, Pumpkin, Chia, Sesame Seeds

120g Nut Butter E.g. Almond, Peanut, Cashew Butter

Nuts E.g Cashews. Almonds (Optional)

Dark Chocolate (Optional)

Recipe

1) Pre-heat the oven to 180C/350F.

2) Place all ingredients into food processor and blend until fully combined and the mixture comes together well.

3) Spoon out the mixture into a square or rectangular silicone cake tray or parchment lined cake tin. Press down firmly to compact the mixture going right to the edges. If desired, add some additional nuts to the top and press in firmly.

4) Bake in the oven for 40 mins or until the edges are lightly browned. Remove from the oven and whilst still warm, use a sharp knife to cut into slices. Then leave in the tray to cool. If desired, drizzle some melted dark chocolate over some of the bars and allow to cool and go solid.

5) When cold, use a sharp knife to go over your original cuts and separate each slice.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
