Ingredients

Sheets of Nori (dried seaweed)
Sticky Rice
Grated Carrot
Thinly Sliced Cucumber
Thinly Sliced Bell Peppers
Thinly Sliced Avocado
Liquid Aminos
1 tsp Pureed Ginger
1 tsp Pureed Garlic

Recipe

1) Place a sheet of nori on a flat surface. Spread a layer of sticky rice evenly over the sheet, going close to the edges.

2) Across the centre of the sheet spread out the carrot, cucumber, peppers and avocado, creating a long line of each veg option from one end of the sheet to the other.

3) Roll up your sheet of nori tightly enough so that the contents stay in place as you roll. Once you have completed rolling the sheet, use a sharp knife to cut into rounds of approximately 2-3cm long or to your preferred size.

4) Make a sushi dip using some liquid aminos/low salt light soy sauce, garlic and ginger - see our dressings, sauces & condiments recipes. Stir well and dip the end of your rainbow sushi rolls into the delicious dip and enjoy!

Top Tips

You can make sticky rice using whole-grain rice. Just add more water than normal and keep cooking until it becomes very soft and sticky.

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
