Ingredients

Medjool Dates
Nut Butter (Almond, Peanut, Cashew etc)
Chopped Nuts (Pistachios, Brazil Nuts, Walnuts etc)

Recipe

1) Remove the stone from the dates by slicing down one side and carefully lifting it out with a knife.

2) Use the knife to widen the slit you have made and then use a teaspoon to spoon a small amount of nut butter into the date so that

3) Sprinkle some chopped nuts over the nut butter. Continue to process to make a selection of stuffed dates.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.

Don’t forget to keep the skins on your veg where possible for essential added fibre and nutrition.
