Veggie Dips

These 4 easy veggie dip recipes are so easy and are enough to make a small tub of each dip, but feel free to increase quantities as necessary to keep plenty to hand in your fridge.

You can also freeze it for future use to save time and effort later.

Feel free to use frozen veg/fruit/herbs etc in any of my recipes if you don’t have access to fresh options.

Carrot dip Ingredients: 2 carrots, 1 garlic clove, juice of half a lemon, salt, pepper

Method: Bring a small saucepan of water to the boil. Peel and chop the carrots and boil them until fork tender. Drain and put the carrots into a food processor along with the garlic and lemon juice. Process until you get a paste, occasionally stopping the machine and using a rubber spatula to push all the mixture down into the bowl. If the consistency is too thick, add a splash of water. Season to taste.

Avocado dip Ingredients: 1 large avocado, 1 spring onion, juice of one lime, 1 tbsp chopped parsley, salt, pepper

Method: Remove the skin from the avocado and mash the flesh in a bowl. Finely chop the spring onion and add to the bowl with the lime juice and parsley. Stir to mix and season to taste.

Beetroot dip Ingredients: 4 medium beetroots, 1 garlic clove, juice of half a lemon, salt, pepper

Method: Bring a small saucepan of water to the boil. Quarter the beetroots and add them to the pan, cooking them for 15-20 minutes until tender. Drain and rinse them with cold water. Using the end of a spoon, peel the skin off the beetroots and put them in a food processor. Add the garlic and lemon juice and mix until you get a paste. If the consistency is too thick add a splash of water. Season to taste.

Hummus dip Ingredients: 1 can of chickpeas, 1 garlic clove, 1 tahini pastel, juice of half a lemon, 1 tsp cumin or ras el hanout & pepper.

Method: Drain the chickpeas, reserving a little of the water. Add them to the food processor along with the garlic, lemon juice and seasoning. Mix to form a paste and add the reserved water a little at a time to loosen the mixture to the desired consistency.

Top Tips

If there are any ingredients that you do not like in any of the recipes, then feel free to swap them out for another food choice within the same food category (grains, beans & other legumes, fruit, veg, nuts & seeds).

You can also use frozen fruit or veg when you don’t have the fresh option.
